Spicy Brinjal Cabbage Curry Recipe

This is a typical South Indian dish prepared from the combination of Brinjal and Cabbage.





Ingredients

     Brinjal    1
     Onion - diced (1 cup)
     Cabbage    1 Cup (16 tbs), chopped
     Chilli powder    1 Teaspoon
     Turmeric powder    1/2 Teaspoon
     Salt    To Taste
     Cumin Seeds - a pinch
     Oil - 3 to 4 tsp
     Coriander leaves Chopped (for garnish)

Directions
* Heat oil in a pan add mustard seeds.

* When they splutter add cumin seeds , diced onion, chopped cabbage and lengthwise   sliced brinjals.

* Add all the spices and salt. Mix well and cover cook on low flame for 15-20   minutes occasionally sauteing them. Move the dish to a platter and garnish with   finely chopped coriander leaves and serve them hot with roti's or rice .
